VINEYARD & VINIFICATION
The winemaking process begins with handpicked grapes, carefully selected to ensure optimal ripeness and quality. These grapes are grown in medium-texture soils with southwest exposure, providing ideal conditions for balanced development. After harvesting, maceration and fermentation take place using selected yeasts in
temperature-controlled stainless steel tanks over a period of 8 to 12 days. Following fermentation, the wine undergoes fining and maturation in steel tanks for an additional 3 to 4 months, allowing it to stabilize and develop its character before bottling.

This Grillo evokes the sun-soaked charm of Sicily, capturing the island’s vibrant character and natural beauty. Subtle hints of exotic flowers and ripe tropical fruits rise from the glass, interwoven with a whisper of lemon balm. On the palate, it’s fresh, elegant, and full of energy—an expressive wine that offers a gentle nod to the
wild, aromatic landscapes of the Mediterranean.
