Description
The 2021 Saurwein Chi is made from 60% fruit from Casey’s Ridge Vineyard and 40% from De Rust Vineyard, both located in Elgin. The grapes are hand-picked, cooled, sorted, destemmed, and pressed before undergoing spontaneous fermentation in stainless steel tanks for about 6 weeks to achieve a balance of residual sugar at 11.5 g/l. After 3 months in tank, the wine is bottled and aged for another 3 months in bottle before release. Casey’s Ridge Vineyard sits on loamy, rocky red slate soils, while De Rust Vineyard is on decomposed Bokkeveld Shale.
