Description
Winemaking:
Grapes are hand-harvested from the estate’s oldest vineyards in Ribera del Duero. The wine undergoes fermentation in oak vats, followed by malolactic fermentation in oak. Aging includes 18 months in new barrels, 42 months in large oak vats, and 3 years in the bottle, achieving a perfect balance of fruit and wood.
Tasting notes:
Deep violet in color, the wine offers aromas of macerated cherry, blackberry, cedar, dill, and vanilla, with earthy leather and mushroom undertones. The palate is rich and opulent, with black fruit, cocoa, fennel, and smooth, evolving tannins, leading to a long, polished finish.
Food pairing:
Ideal with roasted lamb, game meats, aged cheeses, or dishes featuring truffles.
