Description
Viticulture
Sourced from the cool coastal vineyards surrounding the Étang de Thau, France’s second-largest lagoon, this Viognier benefits from a unique maritime influence that preserves freshness and aromatic purity. The moderating coastal climate allows for slow, balanced ripening, resulting in a wine that showcases vibrant stone fruit flavours, floral notes and a distinctive sense of place, true to the region’s goût de terroir.
Winemaking
The aromatic Viognier produces its aromas at a certain stage of maturation. Our winemaking team taste the grapes in August, to choose the right day to harvest. Post-harvest the grapes undergo a short skin-contact maceration. Then, the juice, after a delicate pressing and meticulous off-settling, ferments at low temperature.
Tasting Note
Enticingly aromatic with characteristic exotic stone fruit and honeysuckle, our dawn-picked Viognier is rich yet refreshingly dry.
