    Description

    Grapes/Blend: Chardonnay, Pinot Noir, Pinot Meunier, Pinot Gris, in that order of magnitude in the blend.

    The wine is a field blend which has been co-fermented. There is no added sulphur, yeast, fining agent or dosage for the primary ferment. However, for the secondary ferment we add a biodynamic yeast from Champagne Fleury, but nothing else.

    We use a traditional Coquard basket press.

    No pumps are used for the wine, all movements are done by gravity. Ferment takes place in 5 or 6 fill Burgundy barrels and some amphora. A small proportion of reserve wine is added to the vintage.

    Sheep graze the vineyard in the winter to keep the grass down and add fertility. The vineyard is on south facing chalk downland at an altitude of 90 meters.

    The wine is certified Organic and Biodynamic.

    We are now blending more reserve wine from previous vintages so are labelling this wine as MV. It contains 65% 2022, 30% 2021, 5% 2020. The wine is made in exactly the same way as the 2021, see above. It was on the lees for 21 months and disgorged in March 2025.

    Domaine Hugo is a biodynamic vineyard in Wiltshire that produces English sparkling wine.  Hugo Stewart’s interest in biodynamic farming and creating distinctive wines, combined with his collaboration with talented winemaker Daniel Ham of Offbeat wines, has created idiosyncratic award-winning wines.

    Hugo’s farming odyssey has taken him from conventional pig and cereal farming on the family farm in the 70s, to the creation of Les Clos Perdus – a biodynamic vineyard and winery in the Languedoc, then back to Wiltshire where he decided to dramatically change the farming practices with a new focus on soil health, biodiversity and viticulture.

    In 2016 Hugo planted Champagne varieties on the chalky soils in Wiltshire and by 2018 he had his first vintage.  Domaine Hugo produce traditional method sparkling wine and a semi-sparkling Col Fondo.  Hugo’s viticulture caught the attention of biodynamic pioneer Nicolas Joly, and Domaine Hugo is now part of Renaissance des Appellations-Return to Terroir, the highly regarded group of international biodynamic wine producers.
