    Description

    VINEYARD & VINIFICATION
The winemaking process begins with handpicked grapes, carefully selected to ensure optimal ripeness and quality. These grapes are grown in medium-texture soils with southwest exposure, providing ideal conditions for balanced development. After harvesting, maceration and fermentation take place using selected yeasts in
temperature-controlled stainless steel tanks over a period of 8 to 12 days. Following fermentation, the wine undergoes fining and maturation in steel tanks for an additional 3 to 4 months, allowing it to stabilize and develop its character before bottling.

    TASTING NOTE
This Grillo evokes the sun-soaked charm of Sicily, capturing the island’s vibrant character and natural beauty. Subtle hints of exotic flowers and ripe tropical fruits rise from the glass, interwoven with a whisper of lemon balm. On the palate, it’s fresh, elegant, and full of energy—an expressive wine that offers a gentle nod to the
wild, aromatic landscapes of the Mediterranean.

    Producer Profile

‘Il Folle’ in Italian means the mad one, a wild and gregarious joker. These wines embody the best of the Sicilian
landscape and warm southern character, resulting in wines brim-full of freshness and flavour. The Nero d’Avola
is crafted from hand-harvested grapes from the hills surrounding the town of Marsala. It truly reflects the best
characteristics of this varietal, the king of Sicilian grapes. The Grillo is fresh, bright and easy-drinking, the
perfect accompaniment to lighter pasta dishes and fish, especially spaghetti alla vongole where the saltiness of
the clams really brings out the Grillo’s citrus quality. These wines are certified organic as of 2019, and represent
    stunning value for money.
