In 2019 Stark-Condé have upped the ante but reduced the abv to a sessionable 13.5% which delivers on every level… whether you want bang for your buck or pop for you pound this beauty is plump, juicy and divine. A Frenchman recently said he’d never tasted Cabernet as juicy and delicious as this for the price point. What more do you need to know?

A quiet nose, red-black fruit thrumming under the cover of last year’s eucalyptus leaves. And then nothing, absolutely nothing quiet about the rippling, glossy, stallion-power beauty of the fruit on the palate. Leanly muscled, not an ounce of fat, fluid power, grace. Seriously… this costs £24.99?! The purity of the fruit, which is Cab Sav within every molecule of its life, is thrilling. It’s cassis dark, bay-leaf-scented, box-leaf fresh, densely woven, finely woven, peppered with paprika notes. So, so, so fresh and firecracker juiciness. There’s a gypsy-wild glint of mica, a blade in the darkness, wiped on dew-wet grass, but the wine itself has an almost military discipline, every inch of beauty controlled. “The 2019 Cabernet Sauvignon Stellenbosch is a blend of six different blocks on the estate at various altitudes, matured in around 30% new oak for 20 months. The team here managed to get the fruit off the vine before the March rains hit. It offers brambly, red berry fruit, redcurrant and cranberry mixed with rose petal. The palate is medium-bodied with grainy tannins, a slightly herbal Cabernet in a good way with a Médoc-leaning finish.” – Neal Martin.

In The Cellar
The grapes for this wine are from 4 different Cabernet vineyards and our best Petit Verdot and Malbec vineyards, all at a range of different elevations. Although all are on the decomposed granite soils typical of the hillsides in Jonkershoek, the soil textures vary quite a lot and that, together with the differences in elevations and clones, gives a variety of different flavour profiles to the grapes. The Malbec grapes were picked early March, and the Cabernet Sauvignon and Petit Verdot grapes were harvested in mid-March. After being cold-soaked for a couple of days the juice underwent fermentation with the natural yeasts for about 10 days on the skins. The fermentations were hand punched-down every 4 hours for the first half of fermentation and every 6-8 hours until dry. At dryness, the wine was pressed and racked to barrel for malolactic fermentation and barrel maturation. Only 300L French oak was used, of which about 30% were new. Bottled with no fining and without filtration after 20 months barrel maturation. this vineyard is organic-in-conversion.

In The Vineyard
Cabernet 18-30 years at harvest, Petit Verdot 16 years, Malbec 13 years. 200-310m above sealevel, South East and North West. This wine is the bedrock of our winery. We generally refer to it as our "Estate Blend" being made up from our four Cabernet blocks along with the two other traditional Bordeaux blending varieties that we grow on our farm. Since this wine is from several different blcoks, the soil textures vary, but the soil type is the decomposed granite, iron-rich soils typical of Stellenbosch mountain vineyards.
"Cabernet Sauvignon is the bedrock of the Stark Conde winery and at 87% Cabernet Sauvignon, the 2019 release also includes a small percentage of 10% Petit Verdot and 3% Malbec. This super concentrated vintage sees a pronounced intensity and flavour focus as a result of the reduced pea berry sized crop that yielded high colour, very good phenolics and a lower-than-average alcohol level. This 2019 is certainly deep, dark and opaque with a broody black berry and black plum core from 18- to 30-year-old Cabernet Sauvignon vines. On the nose the wine really impresses with alluring aromatics of violets, raspberry herbal tea, sweet tannery leather, freshly tilled earth and mocha spice before opulent notes of earthy black berry, blue berry and graphite. With such incredible power and intensity of fruit on display here, the subtle cedar wood and black chai tea spice nuances are absorbed by the black fruit and mineral depth. Despite the vintage’s slightly lower than average alcohol level, the palate is wonderfully plush and dense with a classically fresh sweet and sour vein of crème de cassis, black cherry and leafy mulberry over sweet expansive fleshy tannins. When the perfect terroir meets the perfect variety and the finest winemaking knowhow is utilised to capture that in a bottle, this is what you get – mesmerising quality at such an affordable price.
