In The Cellar
The still wine was originally aged in 3-5yo barrels with no malos; the fruit is delicious showing tangerine, papaya and hints of ginger, all the time beautifully underlined by a striking mineral quality, with outstanding length and energy. Disgorged 01/20 - Dosage 4g/l.
In The Vineyard
This wine offers what Laherte refers to as the “quintessence of the Chavot terroir.” It is always a selection of Laherte’s five best barrels from each of his two finest Chavot terroirs: old-vine Chardonnay from a site in Les Chemins d’Épernay (planted in 1957 on clay with chalky subsoils, with around a third of the fruit the rare Chardonnay-Muscaté); and Pinot Noir from Les Rouges Maisons (planted in the late ‘80s on a deep soil rich in clay, flint and schist). Both wines were vinified separately and entirely raised in old Burgundian barrels, including portions fermented in second-hand DRC Le Montrachet barrels.
The 2015 Extra Brut Les Empreintes, equal parts Chardonnay and Pinot Noir, is a terrific wine in this challenging year. Bright and effusive, with lovely floral top notes, the 2015 is a model of precision and grace. All the elements are so nicely balanced. The Empreinte is not the most complex wine in the range this year, but it is super delicious and full of appeal. Dosage is 4 grams per liter. Disgorged: December, 2020.
