    Haut Espoir’s 2007 Syrah/Shiraz, lovingly crafted by owner Rob Armstrong is a thing of beguiling beauty. Having spent 20 months in barrel before bottling it was then aged at the cellar and only released in 2018.

    In The Cellar
    Grapes were de-stemmed, but not crushed, and transferred to open fermentation tanks. During the peal of fermentation, 5 punch downs per day were done. Post fermentation maceration was done for 1 month and then transferred to French Oak barrels, where it underwent Malolactic fermentation. Wine was matured in these barrels for 42 months before bottling.

    The wine is charming and charismatic, belying the 15% alcohol content, with notes of fresh prunes, dates and figs slowly being stewed over a low heat with a healthy fistful of ground white pepper before being spooned into an old, well worn pair of calfskin shoes in act of brutal, but beautifully perfumed, vengeance.
