Located in the heart of a new appellation, Tuscany’s Orcia DOC, between Montalcino and Montepulciano, Fabbrica forms an estate of 35 hectares of vineyards which have been farmed organically since the outset (officially certified since the 2019 vintage). Varieties grown are Sangiovese, Syrah, Vermentino, Viognier, Roussanne and Marsanne. Soils are mainly limestone and clay, the vineyards being at an average altitude of 470m above sea level, forming a natural amphitheatre of vines around the winery.
Seasoned English winemaker Tim Manning, who studied and worked in New Zealand and then worked with Pinot Noir in Oregon before settling down for good in Tuscany, joined Fabbrica in 2020. His winemaking is artisanal and natural, including vinification in Nomblot unlined concrete tanks, gentle crushing by foot (foulage), long maceration in small open bins, whole bunch and manual punching-downs rather than pump-overs.
The varietal approach is brave and different, with an avowed aim not to copy what has been made before, but to experiment and produce unique and original wines from an original, unique and rising winemaking area. They are wines of immense character that are hugely rewarding.

    In The Vineyard
An idea to make a straightforward Sangiovese, in a not so straightforward way. Using whole cluster and long macerations to make a round, very drinkable Sangiovese; a vino di beva that in the end, when you dive in to it, is not so straightforward after all.
A unique expression of Sangiovese in purezza vinified and aged in unlined concrete tanks. A small percentage of whole bunches and a long maceration to bring complexity, elegance and drinkability. A dance of fragrances, brightness and flavours.
