In The Cellar
True to house style, a portion of the base wine (15%) was barrel fermented and 20% of the wine is specially selected from the previous year’s harvests. The wine undergoes its long 45 to 48 month maturation on the lees before final release. It can be enjoyed now but will develop beautifully over four to five years. Colmant Blanc de Blancs blend, created from a special selection of Chardonnay, is the epitome of Chardonnay expression – fine, elegant and fresh.
In The Vineyard
Colmant Blanc de Blancs is made from Chardonnay off selected vineyards in Franschhoek, Elgin and Robertson.
The latest degorgement of the Colmant Blanc de Blancs shows a bright, radiant lemon-yellow glow and exhibits fresh, spicy aromas of buttered glazed brioche, apple strudel, white citrus, brine, crushed granite with generous nutty layers of grilled hazelnuts and salted pistachios. The autolytic characters of biscuit and freshly baked baguette follow to the crisp, structured stone fruit laden palate that shows fine definition and tension supported by salty, fresh tangy acids followed by a long, mineral penetrating finish. This beautiful Cap Classique expression made from pure Chardonnay grapes was matured for 45 months on its fine lees to ensure the attractive toasty brioche and vanilla pod characters are tightly interwoven and seamlessly integrated with the richer nutty citrus elements that caress the palate with a full creamy mousse. Chiselled and tight knit without being austere, this is the eternal charm of pure classically weighted Chardonnay Blanc de Blancs and part of Colmant’s secret that makes this wine an instant sell out release every year. A benchmark Cap Classique that will appeal to the novice and connoisseur alike. Drink now and over the next 3 to 5+ years.
