In The Cellar
Charlotte Krajewski has been quietly working on this exciting project for some time, unannounced, knowing exactly the style of wine she was after but needing to pull the pieces of the puzzle together, and the final piece came in the shape of a 700 litre concrete egg. The oval shape allows the lees to remain in a gentle but continuous motion during maturation, constantly circulating as there are no flat surfaces to settle upon which, in turn, allows for a gentle extraction and integration of flavours. Concrete may sound minimalist and industrial, however it provides an extremely stable temperature and, very importantly, a slower interchange of oxygen than a wooden barrel, ensuring the wine keeps all its original freshness and vivacity. The result is a superb example of a fine wine, one which can be drunk now but which would, if allowed to do so, evolve over the next couple of years. With top-quality, premium rosé firmly in the spotlight, the Krajewski’s have done it again with perfect timing. Chapeau!
Pale pink, slightly deeper than partridge eye pink, with a fresh, tight, herby and red berry-fruited nose, leafy and creamy too. On the palate, plump and full bodied yet retaining this juicy freshness, beautifully mineral and textured going to a long, vibrant, citrus-infused finish. Absolutely delicious, this deserves to be served cool rather than iced to allow the fruit to sing. Drink 2020-2022
