An expression of sophistication, elegance, purity and complexity of terroir that holds one’s attention. A reflection of nature in each glass. The grapes for this wine were sourced from our high lying Sauvignon Blanc vineyards situated at 620 metres above sea level. The exceptional delicate flavours of select parcels deemed them worthy of being released as Sing-a-Wing Sauvignon Blanc. This wine tells the story of a loving couple and the term of endearment shared between them, Sing-a-Wing. The poem written by O.T.V. Senior to his wife, Margaret, on the occasion of their 25th wedding anniversary, is shared on the back label of this Sauvignon Blanc.

An exceptional cold winter and overall cool growing season with above average rainfall made for the perfect growing season. Winter rainfall was
607 mm and there was snow on the peak of the Helderberg Mountain above the farm. A cool and wet budding season with less wind than expected during flowering, made for a challenging period. With 50 mm rain during ripening and temperatures rising moderately, we experienced a fairly cool period. Moisture levels remained favourable and overall the conditions were ideal – one of the best seasons experienced to date with excellent concentration and elegant flavour in our berries.

The 2022 Sing-a-Wing Sauvignon Blanc is another beautifully fashioned white wine from the cool coastal slopes of the Helderberg. The bouquet is lively and zesty but also beautifully crystalline and pure, with aromatics of freshly grated lime peel, tart Granny Smith apples, fresh fennel, and spicy lemon grass hints. The palate is driven by freshness, vitality, and energy, brimming with savoury, leesy notes of apple puree, green pears, lime cordial and exotic notions of stem ginger. Beautifully harmonious and balanced with a tangy, bright acidity and a pithy mineral texture, this is at once a joyous glassful of Sauvignon Blanc deliciousness but also an impressively serious expression. Drink on release and enjoy over 3 to 5+ years [Greg Sherwood MW, 22/02/2023]
