Description
2022 Savage, Follow The Line, Western Cape: This Cinsault comes from a 42-year-old, dry-farmed bush vine vineyard in Darling, planted in decomposed granite on a south-facing slope that faces the cold Atlantic winds. The vineyard has been worked with since 2011, delivering consistent and pure fruit. Grapes are hand-sorted, undergo 50% whole-bunch spontaneous fermentation, and are gently pressed before aging for a year in older foudre, amphora, and 500L barrels. Follow the Line is known for its aromatic purity, showcasing strawberries, cherries, rose petals, violets, and subtle white pepper. It is soft, perfumed, and balanced with the freshness of granitic soils. While it drinks beautifully young, it will age gracefully for up to 10 years.
Food pairing: Perfect with grilled meats, charcuterie, and fresh salads.
