The 2017 Domaine Chevallier, Jongieux, showcases Mondeuse, the region’s most famous red variety. In the cellar, this grape is versatile, allowing for carbonic maceration, traditional methods, or a combination of both, with partial de-stemming and oak-aging enhancing its tannic structure. Mondeuse typically offers a juicy acidity, low alcohol, and a subtle bitter cherry profile. Once more prevalent, Mondeuse almost disappeared post-phylloxera due to its low yields and late ripening.
