    Description

    Winemaking:
The fruit, sourced from Shiraz vines aged 30-100 years and Cabernet vines aged 30-130 years, was hand-harvested at optimal ripeness. Fermentation occurred in small open fermenters, with hand plunging three times daily. The wine was aged for 16 months in new oak hogsheads (92% French, 8% American) and bottled unfiltered to preserve its character.

    Tasting Notes:
Color: Deep garnet with bright purple hues.
Aroma: Herbal notes with blackberry, anise, and spice box.
Palate: Rich layers of dark fruit, complemented by layered spices, supple tannins, and seamless acidity, delivering exceptional length and depth.

    Food Pairing:
Pairs beautifully with slow-cooked lamb shanks, chargrilled ribeye steak, or rich mushroom risotto.
