Description
Winemaking:
The fruit, sourced from Shiraz vines aged 30-100 years and Cabernet vines aged 30-130 years, was hand-harvested at optimal ripeness. Fermentation occurred in small open fermenters, with hand plunging three times daily. The wine was aged for 16 months in new oak hogsheads (92% French, 8% American) and bottled unfiltered to preserve its character.
