Description
Winemaking:
Aged 12 months in large wooden barrels, followed by 11 years on fine lees in stainless steel pressure tanks for exceptional depth and structure.
Tasting notes:
Aromas of apple cider, lemon zest, and chalk, with flavors of warm apple crisp, quince, and clove. Vibrant acidity and a concentrated citrus finish.
Food pairing:
Ideal with roasted pork, shellfish, or egg-based sauces. Also enjoyable as an aperitif.
