Description
This outstanding Cabernet Sauvignon from the Franschhoek region was crafted from fully ripened, hand-harvested grapes. After gentle de-stemming, 20% of the grapes were slightly crushed, with the rest kept whole cluster. The wine underwent a combination of wild and inoculated fermentation, followed by spontaneous malolactic fermentation. It was aged for 43 months in French oak barrels, which imparted depth and complexity.
The result is a full-bodied wine with rich blackcurrant, ripe cherry, and subtle notes of cedar and graphite. Fine tannins and balanced acidity lead to a long, lingering finish. With its excellent aging potential, this Cabernet is perfect for pairing with grilled meats, roasted lamb, or aged cheeses.
