Ventisquero, Tara Chardonnay, Atacama, Chile, 2016
Ungrafted Chardonnay vines. Hand-harvested, whole clusters foot-crushed, giving a very low yield of around 40%. Nothing was added to the must, not even antioxidant (SO2). The must was then fermented in stainless steel tanks with native yeasts without any additional treatment or additives.
Only 409 bottles were produced and bottled by hand. The wine was aged in stainless steel barrels for 15 months so as not to obscure its distinctive Atacaman identity. It was neither clarified nor filtered and so is slightly cloudy. Aromas of melon and apricot which evolve while drinking.
The characteristics of a fresh climate wine: edgy, less fruity than savoury with bright appley acidity, intense minerality and some saltiness on the finish, fine structure and texture and great length. A truly unique Chardonnay.
