Moreson Fudge, Petrified Chardonnay, Franschhoek, South Africa, 2015
Moreson’s Fudge, which earned its name due to the reminiscence in flavour to its namesake, is produced from petrified (also known as desiccated) Chardonnay grapes. This process involves crimping the stem of the bunches of grapes so that translocation of water is cut off from them resulting in the grapes dehydrating on the vine to the point where they look more like raisins than grapes.
The innovative decision to produce a straw wine using Chardonnay has certainly paid off, with an incredible varietal purity on the palate which is often not found in ‘sticky’ wines. The wine spends 18 months in oak before being bottled followed by another 30 months of bottle age before release. A truly wonderful thing and a must try for any lover of Chardonnay or dessert wines.
