Miss Molly, Blanc de Blancs MCC, South Africa, 2015
In its inaugural vintage Miss Molly has more than corks popping with her 2015 vintage Blanc de Blancs which has already been heralded as the very best MCC in South Africa, coming top in the annual Prescient Top 10. Who better to introduce it than winemaker Clayton Reabow:
2015 marks the production of my first vintage Cap Classique in my 14 years of Winemaking at Môreson Wines. This vintage will always be remembered as one of the Cape’s finest vintages, owing to the perfect growing conditions leading up to harvest and the resulting quality of fruit we received in the winery.
As a purist, I only believe in celebrating a sparkling wine vintage (as is done in Champagne) when the conditions for the fruit are perfect. Produced from a single vineyard on Constantia. The wine was produced from the Cuveé fraction of the pressing which for us is 275 – 325L/ton of grapes.
At the completion of fermentation, I knew the wine was superior enough to bottle as a single Cuveé which is what we did. In my minds eye, I knew I had bottled a significant wine with excellent purity of fruit, lively acidity and a pH to make the wine mature for years to come. The real skill in producing vintage Cap Classique is to create a wine that has the perception of youth, even after it is 5 – 10 years old. That is the making of true “Grand Marque”
