Sparkling wine was born in Southern France's Limoux region in 1531 when Benedictine Nuns discovered the magic of bubbles resulting from a second fermentation in bottle.
Produced using a high proportion of Chardonnay to bring finesse to the wine, it then receives between 18 – 24 months of lees ageing before disgorgement – more than double the legally required length of time. This allows a richness to develop that complements the fresh palate delivering a wine of tremendous value.
