This thrilling Pouilly-Fuisse from certified organic producer Domaine Valette possesses a beguiling complexity than many producers with the names of more famous regions adorning their bottles fail to capture. This is, in part, owing to the 55 year old vines which produce low yields of highly concentrated grapes which are then hand harvested and vinted without the addition of sulphites of cultivated yeasts.


The wine offers a finessed perfume of buttered toast and vanilla as well as a nutty almond richness and notes of dried figs which are a result of the 12 months of lees ageing which is followed by 24 months of barrique fermentation.


This wine, simply put, must be on the bucket list of anyone who considers themselves to be an enthusiast of indulgence.
