Long after harvest is finished we leave these Sauvignon grapes on the vine for a process we call Vine Dried.
As the sun dries out the grape so the sugar increases and when we eventually pick and press these grapes the sugar content is through the roof. The yeast starts converting the sugar to alcohol but out about an alcohol of 10% it runs out of steam it dies. Leaving a lot of sugar behind, hence the Natural Sweet designation.
This wine is best served at the end of a long dinner or wine tasting. You can always pour over some vanilla ice cream if you want. Beware : Drinking a bottle of this everyday for the next month could cause your teeth to start falling out.
