Aristea, Méthode Cap Classique Rosé, Stellenbosch, South Africa, 2016
This is an incredibly elegant and finessed sparkling rosé, produced from Chardonnay and Pinot Noir grapes handpicked at dawn whilst the vineyards are still cool from the night air. This could easily bemuse the most experience tasters into thinking they were trying Ruinart or Laurent Perrier Rosé, both of which cost three times as much
As with the MCC Blanc, only the first press juice (purest and best quality) is used in the production and it then receives a minimum of two years of lees ageing before disgorgement. This is double the legal requirement for MCC, at least 6 months longer than the time required for Champagne.
A beautiful salmon pink in the glass with a delicate mousse that is pleasing and playful on the palate. The flavour of the wine is an abundance of summer berry fruit, from strawberries and raspberries to red cherries, with a deliciously dry finish.
